Thanksgiving is the most solid side dish game in town! AND when you add the greens, well, you will be so thankful!
I’m a sides girl. I’ve been known to make a whole meal out of side dishes when I go out to eat (asparagus, spinach and mashed potatoes please!) so for Thanksgiving dinner, I LOVE to make as many sides as I can.
If you are cooking, I made you this special Holiday Recipe Round Up of clean meals to make including desserts (the most important part of the meal!). Using real ingredients with whole foods always taste better, and we all know anti-inflammatory foods keep you glowing inside and out.
Let’s start with the yummiest green side there is- Oh So Good Spinach Salad! This recipe is from my best-selling cookbook, Go Clean, Sexy You: A seasonal guide to detox. - and you can get the eBook FREE when you get your Black Friday deal!
Oh So Good Spinach Salad
- 1 bunch spinach (1 cup)
- 1 pear, cored, quartered and sliced
- 1/4 cup dried cranberries
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. minced onion
- Sea salt and freshly ground pepper to taste
- 1/2 cup pecans
- 1 tsp. extra virgin olive oil
- 1/4 tsp. sea salt
- 1/4 tsp. cayenne pepper
Pecans: Preheat oven to 350° F. Combine all ingredients in a small bowl, and toss until well coated. Place on parchment-lined baking sheet, and bake for 3-4 minutes, or until toasted, stirring occasionally. Let cool.
Vinaigrette: Whisk together all ingredients and season with salt and pepper.
Salad: Place spinach, pear, and cranberries in a bowl. Add vinaigrette and toss. Transfer to serving bowl and top with pecans. Serve.
*The cayenne pepper gives this salad a little kick and the cranberries a sweetness!
*It took me literally about 6 minutes to whip up this meal. I also listened to MCYogi on Spotify to keep things light and happy. Something about zen and hip hop …
